Here is another recipe requested by reader Daphne. It’s card 10 in section 18 and it’s call Rice with Ham, Peas, and Cheese.
In Italian, the dish is called “Risi e Bisi.” If you’d like, go google that term for a zillion potential recipes. Basically, it’s a almost but not quite a risotto – creamy, ricey, and oh so good.
The recipe calls for ham, but you could easily leave that out or use any leftover cooked and cubed meat like chicken or beef.
Rice with Ham, Peas, and Cheese
Ingredients
- 1 pound ham cooked and cubed
- 2 tablespoons butter
- 1 large onion chopped
- 1 1/2 cups long-grain rice
- 1 10-ounce package frozen green peas
- 3 cups chicken broth
- 3/4 cups parmesan cheese shredded
Instructions

Heat butter in heavy-lidded casserole. Add onion and saute for 2 minutes until tender. Stir in the rice. Mix until rice is evenly coated with butter.

Add the frozen peas and ham, then add the broth. Bring to boiling; stir once. Cover and turn heat down to low. Cook for 20 minutes. Rice should absorb all the liquid in this time.

Fold in parmesan cheese. Add additional butter if needed. Taste and add salt and pepper if necessary. Serve immediately.
