Radishes and apples in a salad? You betcha.
Just like the Potato and Apple Salad from last week, this Radish and Apple Salad is an interesting alternative to a basic boring green salad.
Think crunchy, sweet, and a little pepper, too.
Change out the sour cream and mayo for your favorite plain yogurt and you’ve got a salad that will surprise everyone – including you.

Radish and Apple Salad
Ingredients
Salad
- 1/4 white or red radishes
- 2 small tart, crisp apples
- 1 tablespoon lemon juice
- 1 medium cucumber
Dressing
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon dill
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper
Instructions

Wash radishes and trim ends. Cut into julienne pieces.

Cut apples into eighths. Remove cores and cut into thin slices. Toss with lemon juice to prevent darkness. Combine with radishes.

Peel cucumber and cut in half. With spoon, scoop out seeds from center. Cut into 2-inch pieces, then into julienne pieces. Add to radishes and apples.

For dressing, stir together all ingredients.

Serve dressing along with the salad for individual spooning, or mix into salad just before serving. Garnish with fresh dill or parsley, nad a slice of fresh cucumbers.
