Potatoes and apples in a salad? What kind of madness is this?

I’m not sold, but whatever. I’m just trying to make my way through all 1,000+ cards in this collection.
Potato Apple Salad
- 2 cups potatoes cooked, peeled, and diced
- 2 cups apples unpeeled and diced
- 1 tablespoon lemon juice
- 1 pickled gherkin chopped
- 1/4 cup green onion minced
- 1 tablespoon capers
- 1/2 cup mayonnaise
- 1/2 tablespoon Dijon-style mustard
- 1/2 teaspoon salt
Combine potatoes with apples. Sprinkle with lemon juice to keep apples from turning dark.
Blend in gherkin, green onion, and capers. Mix mayonnaise, mustard, and salt. Add to potato mixture and blend thoroughly.
Turn into a serving bowl. Chill until serving time.
Garnish with sliced green onion and capers.
