This robustly flavored spinach salad from My Great Recipes is low in calories though you’d never guess it. The dressing contains no oil, simply a combination of soy sauce and vinegar.
Be certain to wash the spinach well as there is often sand in the fold of the leaves. For easier drying, try a “salad spinner.” To keep mushrooms crisp, do not wash in water, rather wipe clean with cloth or soft brush.
Good served with any roasted or broiled meats or poultry. Also makes an excellent accompaniment to a single Oriental-style dish, such as sweet-sour pork or shrimp.

Spinach Salad with Soy Sauce Dressing
Ingredients
Salad
- 1 bunch spinach
- 1/4 pound mushrooms sliced
- 2 green onions sliced diagonally
- 1 cup alfalfa or bean sprouts
- 1 avocado diced
- 1/4 cup sunflower nuts salted
Dressing
- 1/4 cup soy sauce
- 2 tablespoons white wine vinegar
- 1 teaspoon sugar
- 1/4 teaspoon pepper
Instructions

Wash spinach well and dry. Remove stems.

Combine spinach with mushrooms, green onions, and sprouts in chilled salad bowl.

Top with avocado and sunflower nuts.

Just before serving, mix soy sauce, vinegar, and sugar. Stir until sugar is dissolved. Add pepper.

Drizzle dressing over salad and toss gently.
