Ideally suited for a hot summer day’s luncheon or buffet menu is this ring mold that tastes as refreshing as it looks. Fill the center with fruits of the season, such as cherries in summer and mandarin oranges in winter, or as we have done, with vine-riped black grapes.

Cottage Cheese Salad Mold with Limeade
Ingredients
- 3/4 cup milk
- 1 3- ounce package lime gelatin
- 3 cups cottage cheese
- 1 6- ounce frozen limeade thawed
- 1/2 cup pecans chopped
- 1 cup whipping cream whipped
Instructions

In a large saucepan pour the milk. Sprinkle gelatin over milk. Place over low heat and stir until dissolved. Remove from heat.

Thoroughly beat in cottage cheese. Add limeade and pecans. Fold in whipped cream.

Turn into 6 1/2-cup ring mold and chill 4 to 6 hours or longer.

Unmold onto lettuce-lined serving plate. Fill center with grapes. Garnish with lime slices.
