While the recipe suggests this would be a festive Christmas dessert, I’m thinking these Coconut Ice Cream Balls could be delicious in the middle of the summer!
The recipe for Coconut Ice Cream Balls come from the Cross Country Cookery cookbook.
The other things is that this is not so much a recipe as a suggested way of preparing ice cream balls. I love the idea of rolling the ice cream in stuff and then freezing for later use.

Coconut Ice Cream Balls
Ingredients
- Ice cream your choice of flavor
- Candied Cherry
Minted Coconut
- 1 teaspoon water
- 6 drops green food coloring
- 3 1/2 ounces coconut
- 4 drops peppermint extract
Coffee Coconut
- 1 1/2 teaspoons instant coffee
- 1 1/2 teaspoons water
- 1 1/4 cup coconut
Instructions

Chill a cookie sheet in the freezer.

Scoop ice cream and shape into balls. Roll balls in minted or coffee coconut, crushed fruits, mincemeat, ground nuts or whatever.

Place coconut ice cream balls on the chilled sheet and freeze.

Package in plastic bags and store in the freezer.

When ready to serve, place 1/2 candied cherry on top as a holder and slip a small candle in the center. Light. This makes a very festive, white Xmas dessert!
