Cinnamon Discs are a simple cookie – kind of like snickerdoodles but with nuts and cinnamon. The recipe comes from the Red Plastic Box collection I found at an estate sale a few years ago.

Cinnamon Discs
Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup flour sifted
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup walnuts chopped
- 2 teaspoons cinnamon
Instructions

Cream shortening and sugar. Add egg and vanilla; mix well.

Sift together flour, baking powder, and salt. Add to creamed mixture.

Chill dough; mold mixture by tablespoonfuls into balls. Roll in mixture of nuts and cinnamon. Place 2 inches apart on ungreased cooky sheet. Bake at 375 (moderate) for 12 to 15 minutes.
