Here is a recipe card from the Michigan Consolidated Gas Company. The card has two recipes for potatoes: broiled cheese and hashbrowns.
Broiled Cheese Potatoes
- 1/2 pound processed cheese grated or diced fine
- 1/2 cup milk
- 3 cups potatoes cooked, diced, and seasoned
- 1 medium onion sliced
- 3 tablespoons shortening
Add cheese to milk and heat slowly over a low flame.
In a dish or pan which can be placed under the broiler flame, pour in half the melted shortening.
Add half of the diced potatoes, half of the sliced onion, and rest of melted margarine. Sprinkle with salt and pepper.
Repeat layer, pouring the cheese sauce over all.
Place pan so potatoes are 5-6 inches from flame and broil 8 to 10 minutes or until sauce is flecked with brown.
