The chocolate mint wafer sandwich cookie recipe is from the Red Plastic Box collection that I picked up at an estate sale a few years ago. The recipe makes 3 dozen cookies.

Chocolate Mint Wafers
Ingredients
Wafers
- 1/2 cup shortening
- 1 cup sugar
- 1 egg
- 3 1- oz squares unsweetened chocolate
- 2 cups sifted flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup milk
Filling
- 1 egg white
- 3 tablespoons water
- 1 cup sugar
- 1 teaspoon light corn syrup
- 16 marshmallows diced
- 1/4 teaspoon mint flavoring
Instructions

Cream shortening and sugar; mix in egg and melted chocolate. Stift dry ingredients together; add alternately with the milk.

Chill; roll out 1/8 inch thick on a floured surface. Cut in rounds.

Bake on a greased cooky sheet at 400 (hot) for 6 to 8 minutes. Put 2 cookies together with the filling.
Filling

Combine egg white, water, sugar, and corn syrup in double boiler. Cook, beating constantly, until mixture forms peaks, about 7 minutes; add marshmallows. Remove from heat; add mint flavoring. Beat until thick enough to spread.
