Carrot and Cucumber Salad
Ingredients
Salad
- 2 medium cucumbers julienned
- 3-4 stalks celery julienned
- 3 medium carrots julienned
Dressing
- 1 tablespoon vinegar
- 1 tablespoon dijon-style mustard
- 3 tablespoons salad oil
- 1 teaspoon tarragon
Instructions

Combine the vegetables into salad bowl, mixing well.

For the dressing, blend the vinegar and mustard in a mixing bowl. Add oil in slow but steady stream. Blend well. Add the tarragon.

Pour the dressing over the salad. Sprinkle with some extra tarragon. Cover and chill 30 minutes.

Toss gently but thoroughly before serving.
