House wrote, “When mini pumpkins were first grown on truck farms, I thought they were members of the inedible, but very attractive gourd family. Much to my surprise this nifty little pumpkin tastes like winter squash. Here’s a neat way to fix one or as many as you wish.”
Mini Pumpkin Surprise
Ingredients
- 1 miniature pumpkin
- 1 teaspoon butter
- 2-3 teaspoons brown sugar
- 1 sprinkle nutmeg
- 1 sprinkle cinnamon
Instructions

Cut off the top of the pumpkin and about a quarter of the way down. Scoop out the seeds.

Put butter, brown sugar, cinnamon, and nutmeg in pumpkin. Replace top and place pumpkin on cookie sheet.

Bake in preheated 350 oven for 45-55 minutes until fork tender.
