Onion Puffs and Cheddar-Filbert Slices can be broiled at the same time, to provide variety without much effort. Purchase heavy, thinly sliced German or Westphalian pumpernickel bread.
You can assemble these appetizers ahead of time and broil them just before serving.
Quick and tasty.

Two Broiled Appetizers - Onion Puffs and Cheddar-Filbert Slices
Ingredients
For the onion puffs
- 1/2 cup mayonnaise
- 2 tablespoons parmesan cheese grated
- 2 tablespoons onion grated
- 1 teaspoon dijon-style mustard
- 8 slices pumpernickel bread
- 2 tablespoons butter
For the cheddar-filbert slices
- 4 slices pumpernickel bread
- 1/2 cup sharp cheddar cheese shredded
- 1/4 cup filberts chopped
Instructions
Make the onion puffs.

Stir together mayonnaise, parmesan cheese, onion, and mustard.

Cut pumpernickel into quarters. Heat butter in skillet. Saute pumpernickel squares for 2 minutes until crisp on one side. Remove.

Spread soft side of bread with mayonnaise mixture, dividing mixture evenly. Place on cookie sheet.
Make the cheddar-filbert slices

Place bread on cookie sheet. Layer cheese and filberts on slices.

Broil the two appetizers about 4 inches from source of heat until mayonnaise mixture is browned and cheese and filberts are melted together. To serve, cut cheddar-filbert slices into quarters. Arrange both appetizers on a platter. Serve immediately.
