The subtle flavor of framboise, an exquisite, clear liquid made from raspberries, and the audacious presence of chocolate, make this cheese cake a very special dessert. If desired, orange-flavored liqueur may be substituted for framboise in the recipe below.

Orange Comfort
3/4 jigger Southern Comfort
1/3 jigger anisette
1/3 jigger orange juice
1/3 jigger lemon juice
Shake well with ice; strain into cocktail glass and garnish with 1 slice cocktail orange in syrup.
Southern Sunset
1 jigger Southern Comfort
1/2 jigger anisette
1 dash orange bitters
1 teaspoon grenadine
Shake Southern Comfort, anisette, and orange bitters well with ice. Strain over crushed ice into cocktail glass. Float grenadine on top and garnish with mint sprig.

Chocolate-Raspberry Cheese Cake
Ingredients
For the crust
- 2 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup butter melted
Cheese Cake
- 3 8- ounce packages cream cheese
- 1 cup sugar
- 2 eggs
- 1 8- ounce package semisweet chocolate
- 2 tablespoons heavy cream
- 1 cup dairy sour cream
- 1/4 cup strong coffee
- 1/4 cup framboise
- 1 teaspoon vanilla extract
Instructions
Make the crust.

Combine crust ingredients in bowl and mix.

Preheat oven to 350. Lightly grease 9-inch spring-form cheese cake pan and sprinkle graham cracker crust mixture on bottom, about 1/2-inch deep. Set aside.
Make the Cheese Cake

Let cream cheese soften to room temperature; stir in sugar; beat eggs and stir into cheese.

In double boiler melt semisweet chocolate pieces with heavy cream. Stir melted chocolate, sour cream, coffee, framboise, and vanilla into cheese mixture. Pour into 9-inch spring-form pan.

Bake 45 minutes (cheese cake will be creamy and a little runny in center.) Let cool and chill. To serve, unmold and garnish with chocolate curls. Garnish with whipped cream, if desired.
