Peaches, nectarines, and papaya may be substituted for apricots in this recipe. If desired, serve with peach or strawberry ice cream instead of whipped cream.

After-Dinner Special
1 jigger apricot brandy
1 jigger Grand Marnier
1/2 jigger lime juice
Shake well with ice and strain into cocktail glass. Garnish with lime slices.
Alternates: Make an after-dinner cooler by pouring into a highball glass. Fill with ice – or try ginger ale or club soda.

Apricot Cracker Pie
Apricot Cracker Pie
Servings 6 servings
Ingredients
- 20 graham crackers
- 1/2 cup sugar
- 1/4 cup butter melted (1/2 stick)
- 1 20- oz can apricots drained (or 1 dozen fresh peeled, cored, and sliced)
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon rum extract
- 2 tablespoons superfine sugar
Instructions

Preheat oven to 325.

Crush graham crackers with rolling pin or in food processor. Mix in sugar and melted butter. Divide mixture in half. Spread half mixture into bottom of 9" pie plate to form crust.

Arrange dried apricots on top of graham cracker crust. Top with remaining graham cracker mixture. Bake 30 minutes.

Make whipped cream: Beat cream until it begins to thicken; stir in vanilla, rum extract, and superfine sugar. Beat until stiff peaks form.

Serve warm with whipped cream.
