Scalloped Eggplant Deluxe

Ingredients

  • 1 eggplant pared and cubed
  • 1/2 cup dry wine
  • 2 eggs lightly beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoon onion minced
  • 1 cup soft bread crumbs
  • 1/3 cup butter melted
  • 1/2 cup cheese grated

Instructions

  1. Pare and cut eggplant in 1/2" cubes. Cover with wine and cook until just tender. Do not drain. Add salt, pepper, bread crumbs, butter. Put in shallow buttered baking dish. Top with cheese. Bake at 350 until firm, about 25 min
