Card 36 in the Salads and their Dressings section of My Great Recipes is a super easy coleslaw.
Try it with chopped pears, halved grapes, orange segments, or raisins instead of (or in addition to) the apples. And definitely add walnuts for a little more crunch.
Sweet Tart Coleslaw with Celery Seed Dressing
- 2 cups cabbage finely shredded
- 1 1/2 cups apple chopped
- 1/2 cup celery seed
- 1/2 cup sugar
- 1 tablespoon celery seed
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 2 tablespoons instant minced onion
- 1/3 cup white wine vinegar
- 1 cup salad oil
Toss cabbage and apple together in chilled salad bowl.
Combine sugar, celery seed, salt, dry mustard, onion, and vinegar in screw top jar. Shake until sugar is dissolved.
Add oil and shake vigorously before serving. Dressing will separate upon standing; shake before using.
Just before serving, pour dressing over. Toss lightly to coat evenly.
Store remaining dressing in the refrigerator. It is excellent on fresh fruit salads.
