At first I thought this recipe from Cross Country Cookery was for cookies. Then I read the recipe for Maids of Honor and figured out they were tarts.
And THEN I researched a little and learned the history of these purely English tarts.
I think the recipe below is missing one pretty important step. Instead of “pour on butter” in the last step before baking, it should say top with the almond paste mixture. Do that, and I’m sure these will be tasty.
Maids of Honor
- Pastry for 2 pie crusts
- 2 eggs
- 2 tablespoons flour
- 1/2 cup sugar
- 1/2 cup almond paste
- 1-2 tablespoons dry sherry
- 2 tablespoons butter melted
- 1 tablespoon lemon juice
- strawberry jam
Roll out pastry. Cut circle 1/2″ larger all around than diameter of tart shells.
Line 8-10 3 1/2″ individual tart shells with pastry. Place on cookie sheet.
Beat eggs till light and fluffy. Gradually beat in sugar.
Soften almond paste with sherry, butter, and lemon juice. Add to butter. Stir in flour.
Put 1 teaspoon jam in each shell. Pour on butter.
Bake at 350 for 45 minutes until golden.
