Card 34 in the “Salads and their dressings” category of My Great Recipes sounds like it just might be keto-friendly. I have no idea. What do you think?
It’s cauliflower, cider vinegar, sour cream, dry mustard, pepper – and not much else.
And it sounds like it would work with yogurt instead of sour cream for something more light.
No matter how you mix it, I think it’s really good picnic food, how about you?
Crispy Cauliflower Slaw
- 1 cauliflower
- 1/4 cup green onions minced
- 1/2 cup celery leaves minced
- 1 cup sour cream
- 6 tablespoons salad oil
- 2 tablespoons cider vinegar
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- 1/8 teaspoon dry mustard
- Salt to taste
Immerse the cauliflower in cold salted water, head down, for about 10 minutes. Drain well.
Remove the core and finely chop the cauliflower.
In a large mixing bowl combine the cauliflower with the onions and celery leaves, mixing well.
Combine dressing ingredients in separate bowl, blending well.
Pour the dressing over the ingredients and toss gently but thoroughly. Cover and chill at least 1 to 2 hours to blend flavors.
Transfer to a salad bowl. Sprinkle top with paprika, green onions, and grated carrot, if desired.
