The ABC of Jiffy Cookery was published in 1961 by Peter Pauper Press.
In business since 1928, Peter Pauper Press publishes gift books, travel journals, stationery, cards, children’s book and – back in the day – cookbooks.
Peter Pauper Press published a wide variety of inexpensive cookbooks, too. The ABC of Jiffy Cookery was only $1.25 in 1961.
Their current website even offers a compilation cookbook of favorites called Festive Cookery featuring vintage recipes from the Peter Pauper Press vault by Edna Beilenson.
Not only was Edna Beilenson the wife of the founder of the press, but she also worked side-by-side with her husband right from the start. She was the company president from her husband’s death in 1962 until her death in 1981.
Among Mrs. McCrea’s independent work were the covers and illustrations for dozens of cookbooks published by Peter Pauper Press, with titles ranging from “The ABC of Canapes” and “The ABC of Cheese Cookery” to “Simple Continental Cookery,” “Simple Hawaiian Cookery,” “Aquavit to Zombie: Basic and Exotic Drinks,” and “Abalone to Zabaglione: Unusual and Exotic Recipes.”
I think you’ll agree this salmon with sauce is interesting. It’s missing a few things – like the salmon and cooking times.
Salmon With Sauce
For the salmon
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon parsley shredded
- 1/4 teaspoon celery seed
- 1 teaspoon salt
- whole black pepper
For the sauce
- 1 cup sour cream
- 1 teaspoon dill weed
- 1 tablespoon wine vinegar
- 1/4 teaspoon sugar
- 1 teaspoon salt
Poach salmon in water seasoned with seasoned salt, parsley, celery seed, salt, and whole black pepper. Serve hot or cold with the sauce.
