Croque Monsieur and Croque Madame
For a deluxe version, add a thick slice of tomato on top of the ham. Spoon on cheese and top with bacon strips. Broil until bacon is crisp and serve as an hors d’oeuvre or light lunch or supper entree.
In some lexicons, Croque Madame is a toasted or grilled sandwich using cooked white meat instead of ham. Thinly sliced breast of chicken or turkey may be used if desired.
- 12 slices white sandwich bread
- 1/2 cup butter
- 12 sliced boiled ham
- 2 cups cheddar cheese grated
- 1 egg lightly beaten
- 2 teaspoons paprika
Preheat oven to broil.
Toast bread lightly in toaster and spread butter thinly over 1 side of toast. Arrange buttered toast slices on lightly greased baking sheet, butter side up. Top eat slice toast with 1 slice ham.
Stir grated cheese and egg together. Spoon mixture on top of ham slices, distributing evenly. Sprinkle with paprika and place under broiler until puffed, bubbly, and golden brown, about 2 minutes.
Remove from oven. Cut each slice bread into 4 squares, trimming all crusts if desired. Arrange on serving plates and serve warm.
