Honey Bran Muffins with California Lemonade

California Lemonade is a fine, long drink for a sizzling summer day; bran muffins fresh from the oven will add to your appreciation of the lemonade. This is Card 56 from the 2 in 1 International Recipe Card Collection.

Try Salmon-Avocado Wraps as an accompaniment. Slice avocado thinly lengthwise, wrap with thinly sliced strips of smoked salmon. Place on a platter and sprinkle with lemon juice and capers.

Honey Bran Muffins

Ingredients

  • 1 cup all bran cereal
  • 1 cup skim milk
  • 1 egg
  • 4 tablespoons vegetable oil
  • 1/2 cup honey
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 400.
  2. Place cereal in mixing bowl; add milk and stir. Let stand 5 minutes. Add egg, oil, and honey.
  3. In a separate bowl, mix flour, baking powder, and salt. Add to bran mixture; stir well.
  4. Spoon batter evenly into 12 greased muffin cups. Bake 25-30 minutes or until puffed and golden. Serve warm.
  5. Cocktail Muffin variation: Follow above, but spoon batter into 24 small muffin cups. Bake 15-18 minutes.
