This bacon apple and spinach salad from My Great Recipes sounds lovely. And I even like the idea of adding some tuna to the salad to up the protein content.

Try it with poached or broiled fish, chicken, or with a sandwich.
To transform this salad into a main dish, top each serving with drained, canned tuna, water or oil-packed. Drizzle some of the dressing over the tuna for added flavor.
You could replace the sunflower nuts with toasted, sliced almonds.

Bacon, Apple, Spinach Salad
- 6 slices bacon cooked and crumbled
- 1 pound fresh spinach
- 1 apple cored and sliced
- 3 green onions thinly sliced
- 1/4 cup salted sunflower nuts
- 3 tablespoons white wine vinegar
- 1 teaspoon sugar
- 1 teaspoon dijon-style mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive or salad oil
Toss bacon, spinach, apple, and onion together in salad bowl.
Whisk together dressing ingredients until well blended.
Just before serving, drizzle dressing over salad, tossing well. Sprinkle with nuts.
