Here is another easy-to-prepare meal from the kitchens of the Michigan Consolidated Gas Company in the mid-50s.
And, although this recipe for Chinese Pepper Steak is older, it looks like it would fit right into a modern menu plan.
Chinese Pepper Steak
- 1 pound top round steak cut diagonally into 3/4″ strips
- 2 tablespoons shortening
- 2 green peppers cut in 1/4″ strips
- 2 tablespoons onion minced
- 1 clove garlic
- 1 cup celery strips
- 3/4 cup stock
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons cornstarch
- 2 tablespoons water
- 1 teaspoon cornstarch
Brown beef strips in hot shortening in skillet.
Add green peppers, onion, garlic, celery, stock, and seasonings.
Cover and bring to boiling point and cook over simmer flame 10 minutes. Remove garlic.
Blend cornstarch with water and soy sauce. Stir into meat mixture. Cook 10 minutes longer.
Serve with rice.
