Hot Sesame Sticks

Keep these peppery little pastry-like morsels on hand in the freezer packed in an airtight tin to protect their shape. Serve them along with other appetizers or as an accompaniment to soups and salads.

You may wish to add Hot Sesame Sticks to a cookie tray for a surprising variety from sweet choices.

Makes 48 sesame sticks.

Hot Sesame Sticks

Ingredients

  • 1/2 cup butter
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon oregano
  • 1 egg slightly beaten
  • 2 tablespoons parmesan cheese
  • 4 tablespoons sesame seeds

Instructions

  1. Cream butter. Add flour, cayenne, salt, and oregano. Mix until butter is completely blended into the flour mixture. This may be done in a food processor using the steel blade.
  2. Blend in the egg and work dough with hands, or process until mixture looks like cookie dough. Add the parmesan cheese and blend in well.
  3. Divide into quarters. Divide each quarter into halves and roll out to make a long, finger-thick strand on surface that is sprinkled with sesame seeds. Strands should be about 8 inches long.
  4. Divide each strand into 6 pieces make a dozen pieces from each quarter of dough; four dozen in all. Place on ungreased cookie sheet.
  5. Bake at 400 for 12 to 15 minutes or until pale golden. Serve hot or at room temperature.
