From the Red Plastic Recipe Box collection, here’s a swiss steak.
The recipe doesn’t say how many people this will serve; my guess is two to four.
Swiss Steak
Ingredients
- 2 pounds steak 1 1/2-2" thick
- 2 tablespoons fat
- 2 slices of onion
- salt and pepper to taste
- 1/2 green pepper chopped
- 1/2 cup flour
- 2 cups water boiling
Instructions
Method:

Season flour with salt and pepper, pound into meat with edge of plate.

Heat fat in frying pan. Put in meat and brown on all sides.

Then transfer meat to kettle add onions, green peppers, water and tomato juice if used (see below.)

Cover tigtly and let simmer for 2 hours. If more vegetables are added, add 15 minutes before removing.

May substitute 1 cup boiling water and 1 cup strained tomatoes for the boiling water.
